Resep Ayam Goreng Rempah (untuk 5 porsi)
Bahan:
1 kg ayam paha utuh
1 sdt cuka
2 sdt garam
2 sdt gula pasir
½ sdt merica
1 sdm kaldu bubuk
¾ sdt baking powder, opsional
1 butir telur
10 sdm maizena
4-5 tetes pewarna merah, opsional
Bahan bumbu halus:
1 batang serai
3 cm jahe
3 lembar daun jeruk
2 ruas kunyit
1 sdt ketumbar sangrai
1 sdt jintan, sangrai
6 siung bawang putih
6 siung bawang merah
2 buah cabai merah
Pelengkap:
daun kari
nasi putih
Cara membuat:
1. Iris serai, jahe, bawang putih, bawang merah dan cabai merah lalu masukkan ke dalam blender
2. Masukkan kunyit, daun jeruk yang sudah di buang batang nya, ketumbar, jintan dan telur, blender hingga halus
3. Potong ayam menjadi 2 bagian, pindahkan ke dalam mangkuk kemudian masukkan bumbu halus, garam, gula pasir, merica, kaldu bubuk, baking powder, cuka, pewarna merah dan maizena, aduk rata
4. Diamkan selama 2 jam di suhu ruang
5. Panaskan minyak, goreng ayam hingga matang dan masukkan daun kari, tiriskan
6. Ayam goreng rempah siap disajikan

Spiced Fried Chicken Recipe (yield 5 servings)
Ingredients:
1 kg whole chicken thigh
1 tsp vinegar
2 tsp salt
2 tsp sugar
½ tsp pepper
1 tbsp chicken powder
¾ tsp baking powder, optional
1 egg
10 tbsp cornstarch
4-5 drops red food coloring, optional
Spices:
1 stalk lemongrass
3 cm ginger
3 pc kaffir lime leaf
2 segment turmeric
1 tsp coriander, toasted
1 tsp cumin, toasted
6 clove garlic
6 pc shallot
2 pc red chili
Garnish:
Curry leaf
Rice
Steps:
1. Slice lemongrass, ginger, garlic, shallots, and red chili. Put them into a blender.
2. Add turmeric, kaffir lime leaves (stem removed), coriander, cumin, and egg into the blender. Blend until smooth.
3. Cut the chicken into 2 pieces. Transfer to a bowl, then add the blended spices, salt, sugar, pepper, chicken powder, baking powder, vinegar, red food coloring, and cornstarch. Mix well.
4. Let it marinate for 2 hours at room temperature.
5. Heat the oil. Fry the chicken until they’re cooked, then add the curry leaves. Set aside.
6. Spiced Fried Chicken is ready to serve.
