Stove Top Chicken Stuffing Pot Pies
**Use 4 (12oz) ramekins
Ingredients:
1 box Stove Top stuffing mix (chicken flavor)
1 1/2 cup water
7 tablespoons butter, divided and melted
2 cups chicken, cooked and chopped
1/2 cup celery, diced
1/2 cup white onion, diced
1/4 to 1/3 cup flour
1 cup milk
1 cup chicken broth
1/2 cup frozen peas, thawed
1/2 cup frozen corn, thawed
1/2 cup fresh diced carrot
1/2 to 1 teaspoon thyme
salt and pepper to taste
Directions:
1.) Preheat the oven to 350 degrees
2.) Salt and pepper the chicken on both sides. Melt 3 tablespoons of butter in a skillet and cook the chicken over medium-high heat. Remove the chicken when fully cooked and reserve the drippings in the skillet.
3.) Add the onions and celery to the skillet and saute until tender.
4.) Sprinkle the flour into the skillet and cook for 1-2 minutes while constantly stirring.
5.) Whisk in the milk. Continue to stir until it begins to thicken. Whisk in the chicken broth. Continue to stir until it begins to thicken and becomes slightly bubbly.
6.) Add the vegetables, thyme, salt, and pepper. Cook over medium heat for 5-6 minutes, or until the vegetables are slightly tender. Stir in the chicken and remove from the heat. Divide the mixture into the ramekins.
7.) Prepare the stuffing according to the directions on the package. Divide the stuffing into each ramekin and gently pat down.
8.) Place lids on each ramekin (or cover with foil) and bake for 20-25 minutes.
