Meatball Tagine recipe
For 1 large Tagine -
1 kg lamb meat
Tagine spice mix
Smoked paprika
Salt
Pepper
Olive oil
Vegetables & herbs of your choice, i used
Potatoes
Courgette
Mushrooms
Carrots
Bullet chillies
Aubergine
Peppers
Cherry tomatoes
Onions
Garlic
Dil
Coriander
Method
Marinated mince meat in smoked paprika, Tagine spices and salt (leave overnight)
Prepare all the vegetables and marinate in same spices
Add some olive oil at the bottom of the Tagine and create a bed of vegetables, layer the meatballs on top and then layer with the rest of the vegetables
Slow cook on medium heat for 1 hour 20 mins
The vegetables will release water so remove the lid every know and then to avoid over spill, the water will soon dry up. After 1 hour and 20 mins remove from the heat and serve hot with fresh bread
