GUR KE CHAWAL
Preparation time 10 minutes
Cooking time 25-30 minutes
Serving 4
Ingredients
For Jaggery Syrup
2 ½ cups Water, पानी
450 gm Jaggery, chopped, गुड
½ tsp Fennel seeds, सौंफ
few Cardamom seeds, इलायची के दाने
A pinch Salt, नमक
For Gur ke Chawal
1 tbsp Ghee, घी
15-20 Raisins, किशमिश
40-50 gm Dry coconut, sliced, सूखा खोपरा
3 cups Basmati classic, soaked for 20 minutes, बासमती चावल
4 cups Water, पानी
Prepared Jaggery Syrup , तैयार गुड़ की चाशनी
2-3 tbsp Jaggery, chopped, गुड
For Garnish
Pistachio, sliced पिस्ता
Mint sprig , पुदीना
Silver warq, चांदी का वर्क
fresh Rose petals, गुलाब की पंखुड़ियां
Saffron strands, केसर
Process
For Jaggery Syrup
In a deep bottom sauce pot, add water, jaggery, fennel seeds, cardamom seeds and cook on medium flame.
Add jaggery, a pinch of salt and keep cooking until the jaggery completely melts.
For Gur Ke Chawal
In a deep pot, add ghee, raisins, dry coconut, and saute on medium flame until the raisins puffs.
Add basmati rice and saute it well for a minute.
Add water and mix it well. Cover it with the lid and cook on medium flame upto 70 %.
Now, add prepared jaggery syrup and mix it well. Cover it with a lid and cook on medium flame.
Onces the rice is cooked, switch off the flame, add jaggery, cover it with a lid for a few minutes and let the jaggery melt on its own steam.
Onces the jaggery is melted, mix it well.
Garnish it with pistachio, mint sprig, silver warq, fresh rose petals, saffron strands and serve hot.
