This Mimosa cake is the Italian's way to honor women on the 8th of march, the international women's day, and owes its name to the small cubes of cake which are crumbled on top and sides of the cake to resemble a mimosa flower(on this special day, women are given mimosa flowers).
This cake is sweet, elegant,pretty to look and of course, very delicious to eat!

For the sponge:
4 whole medium eggs at room temperature
8 medium egg yolks at room temperature
200g/1 cup sugar
200g/1 1/2 cups flour
100g/7 tbsp starch
50g/1/4 cup honey
A pinch of salt
the zest of a lemon
For the custard:
500ml/4 cups milk
200ml/13 tbsp heavy cream
120g/8 tbsp sugar
80g/6 tbsp starch
8 medium egg yolks
The seeds of 1 vanilla bean
300ml/20 tbsp heavy cream
50g/1/4 cup sugar
For the syrup:
150ml/10 tbsp water
100g/1/2 cup sugar
70ml/6-7 tbsp cointreau
