Flat iron steak is a very tender cut of meat next to the tenderloin. This sometimes forgotten steak is well marbled, making it tender, and is a perfect choice for grill, flattop or stovetop. Delicious steak basted in butter, fresh thyme and garlic. Give it a try and it will become one of your favorite steaks.
Shopping List:
(1) 8 oz. flat iron steak
(1) tbsp. canola or vegetable oil
(1) tbsp. Montreal steak seasoning or just salt and pepper
(2) tbsp. salted butter
(2-3) springs fresh thyme
(1) large garlic clove
Grilled onions
Directions:
Let steak sit out to come to room temperature, about 30-45 minutes.
Lightly brush steak with oil and season generously with the seasoning on both sides.
Heat cast iron skillet on medium high heat then add the oil.
Place seasoned steak in skillet and sear and cook 2 minutes or so on each side depending on its thickness for medium rare.
Flip steak and add the butter, thyme and garlic to skillet. Immediately baste the steak with the melted butter then with tongs, brush the thyme and garlic over the steak.
Remove from skillet and allow to rest 5 minute before slicing.
Slice steak in thin strips against the grain and serve with baked potato and grilled onions.
NOTE: Flat iron steak is best cooked rare to medium rare and sliced thin.
