How to serve & How to have Sadya on BananaLeaf Kerala Traditional Sadya South Kerala Style.
Instructions on How to serve a Sadya on Banana Leaf
Traditionally, sadya is served on a banana leaf, preferably a thooshanila.
When you serve sadya on banana leaf, cut of the banana leaf should be on your right side, and tip of the leaf should be on the left.
The fresh banana leaf enhances the flavor of the curries served hot on it. Sadya will be started with serving Green plantain chips, Sarkara varatti, Papadum and Payam on the left bottom corner of the banana leaf. After that, serve all the pickles. Usually, a sadya will have 3 types of pickles: Puli inji, Mango pickle, and curry naranga achar ( vadukapuli Naranga). Here I made some Inji puli also.Serve all the pickles on the upper left corner or side of the banana leaf.
After that, start with right top of the banana leaf. Serve all the pachadi & kichadi on the right upper half of the banana leaf. Next to this, serve Avial & then Thoran, Kootu curry, stew ( potato stew), Kalan, Olan, and Achinga payar mezhukkurati, and Mathanga errissery to the left, in order(If you don't have space to serve. on left you can serve just down the other curries).Then serve rice on the bottom right lower half of the banana leaf.
On rice, serve Parippu curry and a dollop of ghee on top, and have this rice with papadum. Next, serve sambar. After sambar and rice, we should serve payasam. If you have any jaggery payasam, serve that first. After that, serve milk payasam like vermicelli payasam, if you have any, and we can serve boli at this time.
Next, rice is served with pulissery. After that, serve sambaram. It is served at the end of the sadya, and sambaram is a Kerala traditional digestive. That helps your digestion after big feast.
