來到加拿大之後才開始接觸甜菜根。因為吃素的關係常常在前菜沙拉或主食中看到甜菜根。有一次跟同事們去慶祝做完年終財務報表去了一家超高級義式餐廳,主廚給我的驚喜主菜就是一盤香滑軟酸酸甜甜而不膩的甜菜根。這樣的味道讓人思思念念,想到就會吞口水...😋
以下是爸爸不藏私大公開如何輕鬆在家做出高級餐廳菜 -
🥦#酸甜風味甜菜根(4人份):
🍉 材料:
甜菜根 6顆
2 tsp 鹽
4 tsp 糖
1 tsp 黑胡椒粉
3/4 tbsp 白醋
4 tsp 冷壓橄欖油
(以上份量請依照個人喜好調整)
🍉步驟:
(a) 將甜菜根刷洗乾淨後切薄片
(b) 放入鍋中:
➡️用壓力鍋不需另外加水
➡️用瓦斯烹煮時,水位跟甜菜根比甜菜根少一些即可
(c) 放入一匙鹽、兩到三匙糖和白醋及些許橄欖油和少許黑胡椒鹽(比例視個人喜好調整)
(d) 烹煮:
➡️壓力鍋設定: 壓力設在低,時間九分鐘
➡️瓦斯爐烹煮時間較長,約需壓力鍋兩到三倍時間,小火悶煮,偶而攪拌避免燒焦
(e) 起鍋放涼後冷藏,涼涼的吃酸甜風味
更佳。可直接吃,加羅勒葉(basil)或黑橄欖也可提味
➡️甜菜根的營養功效:
1. 天然維他命: 含有豐富的鉀、磷、納、鐵、鎂等礦物質,具有天然紅色維他命B12及鐵質以及維他命A、B、C、葉酸。是補血聖品
2. 清血、顧肝、降血糖、消脂、排毒、降尿酸
3. 均衡營養幫助消化、增強抵抗力和幫助體內排毒
4. 含豐富的甜菜鹼、可抑制血中脂肪、協助肝臟細胞再生與排毒等功能

🥦Sweet Sour Roasted Beets Recipe
I've only started to know about beets after moving to Canada. As a vegan, beets dishes are often served in the appetizer salads or main courses. Last year, our CFO took our team to a five star Italian restaurant to celebrate us finishing a tough year-end and filing the financial statements to the stock exchange. The chef's surprise specially made, off the menu main course for me, was this heavenly tasty plate of roasted beets. It was tender, sweet and sour, yet earthy and refreshing, simply amazing!😋
Here's the recipe of my Dad's secret easy homemade high end restaurant dish - roasted beets:
🍉Ingredients:
6 beets
2 tsp salt
4 tsp sugar
1 tsp black pepper
3/4 tbsp white vinegar
4 olive oil
(note: the proportion above can be adjusted to personal preferences)
🍉Steps:
(a) Wash the beets and cut into thin slices
(b) Put them into the pot:
➡️No additional water is needed when using pressure cooker
➡️When cooking with stove, pour some water to the level just about 2/3 of the beets
(c) Add in salt, sugar and white vinegar, some olive oil and black pepper
(d) Cooking instructions:
➡️Pressure cooker setting: set the pressure to low and set the time to 9 minutes
➡️Cooking on stove takes longer - about 2 to 3 times as long as the pressure cooker, boil over low heat, and occasionally stir it until tender
(e) Let it cool before refrigerating. It's even more tasty when served cold. Can be eaten directly, or added with basil or olives.
➡️Nutritional benefits of beets:
1. It's a natural multivitamin: rich in potassium, phosphorus, sodium, iron, magnesium and other minerals, with natural vitamin B12, A, B, C and folic acid.
2. Great for liver cell regeneration and clearing our blood. Help regulating and lowering blood sugar, eliminating fat and detoxifying our body. Good for digestion and boosting up our immune system
