CREAMY CUCUMBER & BROCCOLI SALAD
You all know I’m a big fan of Persian cucumbers, and they’re amazing in salads. So, let’s level them up with some super finely chopped broccoli for a creamy cucumber salad that’s crunchy, healthy, filling, and packs a little kick.
Here’s how I made it:
1.Thinly slice 4-5 Persian cucumbers and finely chop 1.5 cups of broccoli. Add them to a large jar or big bowl.
2.Thinly slice 2 scallions and dice 1/2 large jalapeño (deseed if you want less heat!). Add to the jar or bowl.
3.For the dressing mix 2 tbsp mayo, 2.5 tbsp rice vinegar, 1/2 tbsp sriracha, 1.5 tsp sesame oil, 2 tbsp soy sauce or tamari, and 1/2 tsp onion powder. Mix well.
4.Pour the dressing over your veggie mix, then put the lid on and shake vigorously, ensuring everything is evenly covered
5.Flip onto a serving bowl, and finish it off with Aleppo pepper flakes and sesame seeds for an extra punch and crunch
