Beef Short Ribs with Wagyu Beef Tallow
Trim up your beef short ribs and remove silver skin
rub with some salt pepper and garlic
get your smoker up to temp
place short ribs indirect at 225 degrees - 250 degrees F
cook till you have a good bark and rub is set on beef ribs
spread beef tallow on butcher paper and place the beef short ribs meat side down and wrap
place beef ribs back on smoker at 225-250F
probe beef ribs and ready to pull at 203F - 207F
open butcher paper and let rest for 20mins
