This is a quick and easy Northern Thai chicken curry prepared with chicken, spicy paste and coconut milk.
INGREDIENTS:
Coriander stems 5-10 gms
Dry red chillies 3-4 nos
Coriander seeds ¼ tsp
Cumin seeds ¼ tsp
Cloves 2 nos
Cinnamon 1 stick
Lemon grass 2 gms
Ginger 1 piece
Garlic 4 cloves
Onion 1 nos
Salt To taste
Oil 4 tbs
Lemon leaves 2 nos
Turmeric powder ¼ tsp
Chicken 350 gms
Coconut milk ½ cup
METHOD:
1. Take a mixie jar and add coriander stems, dry red chillies, coriander seeds, cumin seeds, cloves, cinnamon stick, lemon grass, ginger, garlic, onion, salt and blend into red colour paste.
2. Heat oil in a pan and add red colour paste, lemon leaves, turmeric powder, chicken and saute it.
3. To it add coconut milk and place lid and cook for 15- 20 min with lid on it.
4. Now the red thai style chicken is ready to serve.
