Chocolate Cherry Truffles

- 12 Cherries, pitted
- ½ cup Almonds
- 12 Medjool Dates, pitted
- ¼ cup Cocoa Powder
- ½ cup Dark Chocolate
1. Add the almonds into your food processor and blend until the almonds form a course crumb.
2. Add the dates and cocoa powder and blend until it comes together in a smooth paste.
3. Squeeze a bit of dough together in your hand to make sure it sticks together. If it crumbles add a few more dates and if it sticks to your hands add a bit more cocoa powder.
4. Measure out about a tablespoon of the dough and form it into a patty, add a cherry into the center, and then gently work the dough around the cherry making sure it is sealed. Do this with all the dough and all the cherries.
5. Melt the chocolate over a double boiler and then dip each truffle into the dark chocolate. Place the coated truffles onto a plate and let them set in the fridge.
