There are the settings I change on the Nikon Z5, and likely other Z cameras, to get the smoothest way of working with a fully manual lens that doesn't communicate with the camera. In this case an adapted Asahi Super Takumar lens.
One additional setting to consider if you want a usable viewfinder regardless of your settings, you can toggle exposure simulation in the custom settings menu:
d7: Apply Settings to Live View

It's too bad they don't have a toggle for this to be different for the EVF and LCD so you could have both. Maybe it can be assigned to a button.
