Just in time for St. Patrick's Day, this Guinness beef stew is the ultimate comfort food. The alcohol is evaporated as the stew simmers low and slow and you’re left with a deep and robust flavor with fork-tender beef, creamy potatoes and the sweetness of carrots. Serve it with a slice of some warm crusty Irish Soda Bread or any bread of your choice to mop your bowl and you’ll wish you made double the amount!
Shopping List:
1 (3 ½-to 4-pound) boneless beef chuck roast, trimmed, and cut into 2-inch pieces
2-3 teaspoons salt and pepper (more for tasting)
4 tablespoons vegetable oil or neutral tasting oil (ie, grapeseed, peanut)
1 onion, diced
2 tablespoons tomato paste
4 garlic cloves, minced
¼ cup all-purpose flour (less for a more watery stew)
3 cups low-sodium beef or chicken broth
1 ¼ cups Guinness Draught (about 12 fl oz)
1 ½ tablespoons packed dark brown sugar
2 springs fresh thyme
2 bay leaves
1 ½ pounds small potatoes, unpeeled
1 pound carrots, cut into 1-inch pieces
2 tablespoons minced fresh parsley
Soda bread (Optional) for serving
