Basil Pistachio Pesto 🌿🇮🇹
80g basil leaves
15g Parmesan cheese (grated)
1/4 cup pistachios
2-3 garlic cloves (crushed)
1/2 tsp kosher salt
1/4 tsp black pepper
1/2 cup olive oil
lemon juice from 1/2 lemon
Method:
1. Wash the basil leaves and dry well.
2. In a food processor place basil, parmesan cheese, garlic, salt, black pepper and pistachios.
3. Grind everything and add olive oil in a thin stream while turning on the food processor.
4. Add the lemon juice and mix.
5. Transfer into a jar, place a small piece of plastic wrap over the top layer of the pesto (so that the top layer doesn't turn black). Keep in the fridge.
