Matcha and black sesame is a classic and delicious combo used in baking. The earthy flavor of matcha works well with the roasted nuttiness of black sesame. They are just a perfect pair in bread and looks absolutely gorgeous in babka! The beautifulness of this babka rely on the fresh green color from the matcha. To retain the the green from the matcha, check out the tips in my video.

Ingredients (Sweet Stiff Starter)
60g sourdough starter
180g high protein flour
80g water
30g sugar
Ingredients (Dough)
460g high protein flour
40g sugar
8g salt
225g milk
2 whole egg (110g)
40g unsalted butter
All of the sweet stiff starter
14g matcha powder
30g water
Ingredients (Black Sesame Paste)
150g black sesame powder
35g soften butter
50g milk
30g sugar
