Egg Curry
Ingredients:-
Eggs - 6
Onions - 2
Tomatoes- 2
Oil - 2 tb spn
Mustard- 1/2 tsp
Cumin - 1/2 tsp
Saunf/ Fennel- 1/2 tsp
Red chillies- 3
Curry leaves- 2 sprigs
Turmeric- 1/4 tsp
Ginger garlic paste- 1 tsp
Chilli powder- 1 tsp
Coriander powder- 1 tsp
Green chillies- 3
Coriander leaves- few sprigs
Pepper powder- 1/2 tsp
Salt - To Taste
Water - As Required
Vinegar- 2 tsp
Method:-
In a pot bring water to boil then place eggs and add vinegar.
Boil them for 8-9 minutes.
After that remove them from hot water and place them in chilled Water.
Peel the eggs and keep aside.
In kadai add oil, mustard, red chillies, cumin, saunf, onion, curry leaves and sauté it. Now add turmeric, ginger garlic paste, tomatoes, coriander powder, chilli powder and little water. Make the gravy as desired consistency and add green chillies, coriander leaves, hard boiled eggs, pepper powder .
Garnish with coriander leaves and serve with Rice / Roti.
