How to make a boiled fruit cake
Ingredients
350 g (12 oz) Dried mixed fruit
110 g butter (4 oz)
110 g (4 oz) Soft brown sugar
120 ml (4 oz) Milk or water
1 level tsp Mixed spice
1 Egg
220 g Self raising flour
Add the fruit, and liquid to a large pan, put on a very low light to melt, then simmer for ten minutes.
Leave to cool for an hour - so when you add your egg, it doesn't cook.
When cool beat in the egg and then the flour.
Spoon into a lined baking ton, 23 cm or 10 inch.
Make a slight dip in the centre so the cake rises evenly.
Bake at 160 C 320 F Gas 3 for 1 hour.
After an hour, remove, test with a skewer - if clean, it's cooked.
Leave in the tin to cool before removing.
