It’s a good thing this salad is one serving because you’re not going to want to share this one. It’s so perfectly balanced between sweet, spicy, savory and fresh all at the same time!
We also love that it uses arugula as the base 🙌 It’s always good to switch up our greens and broaden the array of vegetables we include in our diet. Arugula is actually part of the cruciferous family and great for helping support our detox pathways.

SPICY PEACH FETA SALAD
Serves: 1
Prep time: 5 minutes
Ingredients:
- SALAD -
✨1 peach
✨1 large handful of arugula
✨½ shallot, thinly sliced
✨2 sprigs fresh mint
✨⅓ cup cooked quinoa
✨¼ cup feta, crumbled
✨1 scoop beeya seeds, either phase
- VINAIGRETTE -
✨ ½ Tbsp rice vinegar
✨ 1 Tbsp olive oil
✨ ½ tsp honey
✨ ¼ chili pepper, minced *optional
✨ Sea salt & black pepper
Steps:
1️⃣ Toss all of the salad ingredients in a bowl and whisk together the vinaigrette ingredients in a separate bowl.
2️⃣ Drizzle the dressing over the salad and toss together.
