This recipe for easy savoury scones is my absolute favourite! With loads of cheese and bacon, these scones will leave you wanting seconds. Enjoy them on their own, fresh from the oven with some delicious butter or as part of a meal!

Ingredients (Makes 8 scones)
250 grams all-purpose flour
3 grams granulated sugar
3 grams salt
2 grams cayenne pepper
2 grams garlic powder
8 grams (2 tsp) baking powder
40 grams cold frozen butter, cut into pieces
100 grams butter milk
1 gram (1/2 tsp) lemon zest
1 large egg
1 large egg and 15 grams of whipping cream mixed together (egg wash) for brushing the scones
100 grams grated cheddar cheese
40 grams bacon crumble
3 grams herb of your choice
Directions
1. Preheat the oven to 375 °F (190 °C) and line a baking sheet with parchment paper.
2. Sift the flour, sugar, salt, cayenne pepper, garlic powder and baking powder into a large mixing bowl. Add the butter and cut it in using a pastry cutter, or two knives, until no large pieces are visible, and the mixture is a crumbly texture. Use your hands to rub the mixture between your palms to flatten any butter pieces that may still be there, this will help to make the scones flaky.
3. In a separate bowl, whisk the milk, egg and lemon zest together. Add the milk and egg mixture all at once to the flour mixture. Use a spatula and gently mix everything together just until it starts to come together into a dough, but it is still crumbly. Turn everything out onto a clean surface and add the cheese, bacon and herbs in two parts while bringing the dough together. Keep folding the dough a few times till it comes together.
4. Using your hand, form the dough into a disk shape and using the palm of your hand flatten the dough to form a disk just shy of an inch thick. Now cut the disk into 8 equal triangular portions. Arrange these on the baking tray, leaving some space between them. Brush the top of the scones with the egg wash and sprinkle with some cheese, bacon and herbs. Bake the scones for approximately 18 minutes. Cool the scones on a rack for 5 to 10 minutes. Scones are best enjoyed the day they are baked.
