Very easy and delicious home made lemon curd.
And totally vegan, even better :D
You can use it for cake filling, put it in your'e buttercream, on a cookie or just eat it with a spoon straight from the jar ;)
Recipe;
3 bio lemons / juice 110 gram
1 bio lemon zest
110 gram sugar
1 1/2 tbsp cornstarch
100 gram Vegan butter (or less if you want it thinner)
