GUACAMOLE
Ingredients
1 large avocado
1 medium tomato, finely chopped
1 medium onion, finely chopped
2-3 tablespoons fresh coriander leaves, finely chopped
Juice of ½ lemon
2-3 green chillies, finely chopped
Salt to taste
2 teaspoons Tabasco sauce
A few fresh coriander sprigs for garnishing
Method
1. Finely chop and mix together tomato, onion, fresh coriander leaves in a mixing bowl.
2. Halve an avocado, remove the seed, scoop out the flesh and add to the mixing bowl. Add lemon juice, green chillies, salt, Tabasco sauce and mix well.
3. Transfer to a serving bowl, garnish with coriander sprigs and serve with crackers.
