Cajun Potatoes
Servings - 3 - 4
INGREDIENTS
Water - 1 litre
Potatoes - 275 grams
Corn flour - 2 tablespoons
Oil - 2 tablespoons
Mayonnaise - 95 grams
Garlic salt - 1 teaspoon
Oregano - 1/2 teaspoon
Thyme - 1/2 teaspoon
Chilli flakes - 1/2 teaspoon
Chili powder - 1/4 teaspoon
Ketchup - 2 teaspoons
Onions - for garnishing
Coriander - for garnishing
PREPARATION
1. Add 1 litre water in a heavy skillet, add 275 grams potatoes and cover it with a lid. Boil for 30 - 40 minutes.
2. Transfer it to a bowl, add 2 tablespoons corn flour and mix well.
3. Take a potato and press it gently.
4. Heat 2 tablespoons oil in a pan , add coated potatoes and fry for 3 - 5 minutes or until golden brown.
5. In a mixing bowl, add 95 grams mayonnaise, 1 teaspoon garlic salt, 1/2 teaspoon oregano, 1/2 teaspoon thyme, 1/2 teaspoon chilli flakes, 1/4 teaspoon chili powder, 2 teaspoon ketchup and mix well to combine.
6. Top with the prepared sauce.
7. Garnish with onions and coriander.
8. Serve.
