Borscht is a national dish of Ukraine and the most representative of Ukrainian cuisine. This beetroot soup is common across eastern and central Europe but the origin is from Ukraine. The essential ingredient in borscht is beetroot and it gives the dish its distinctive red color. Every region in Ukraine has its own spin on the classic recipe, but typically it is a sour soup made with beets combined with meat and a variety of vegetables like cabbage, carrots, onions and potatoes. It is usually served with a dollop of sour cream and dill. This is our family’s version of classic borsch.
Ingredients:
16 oz pickled, shredded red beets with juices (454 g)
4 potatoes (cubed)
1 onion (chopped)
1 carrot (shredded)
1 parsnip (shredded)
1/3 green cabbage (coarsely chopped)
6 cups water or any stock (1.4 l)
4 fresh garlic cloves (finely chopped)
1/2 lemon juice
5 fresh sausages (your favorite) – 12 oz (397 g)
4 tbsp butter (56 g)
1 tsp coriander seeds (crushed) (1.69 g)
3 bay leaves
5 sprigs of fresh dill weed (chopped)
Salt and ground black pepper to taste
1. Peel potatoes and cut in bite size chunks
2. Peel and chop an onion
3. Peel a parsnip and a carrot
4. Shred a parsnip and a carrot
5. Coarsely chop cabbage
6. Peel and finely chop garlic cloves
7. Take 1/2 lemon and squeeze juice, remove seeds
8. Place coriander seeds into mortar and gently pound with a pestle until finely crushed
9. In a pot melt butter
10. Add chopped onion, shredded parsnip and shredded carrot
11. Cook about 1 minute, stirring
12. Add cubed potatoes, stir
13. Add water (or stock), cover and bring to a boil
14. Squeeze fresh, uncooked sausage meat from casings and add into pot (bite size chunks)
15. Add coarsely chopped cabbage
16. Add finely crushed coriander seeds
17. Add bay leaves
18. Cover and bring to a boil
19. Add salt and pepper to taste
20. Cook on medium heat about 10 minutes (covered)
21. Add red beets with juices into pot and bring to a boil
22. Add finely chopped garlic and lemon juice
23. Turn off the heat
24. Allow to rest about 5 minutes
25. Add fresh dill
26. Serve hot with a dollop of sour cream
