Hi all - the third and final recipe from Hazel (for now - remember my challenge to all the viewers!) is a much requested but more complex recipe to make - Banana puri. This recipe results in banana puri so delicately flakey that they literally melt in your mouth - well worth the effort to make!
Ingredients
For the banana puri
2 cups flour
Pinch of salt
1 &1/2 tsp baking powder
1 tbs ghee
1 cup cool tap water with 1 tsp lemon juice added in
For layering
~1 cup ghee
~1 cup maizena (corn flour)
Oil to fry
*Allow up to 24 hours to drain excess oil before decorating*
Decoration
Icing sugar for dusting
Coconut or almond toppings
Makes approximately 60 banana puris if using 2 doughs with each having 4 roti layers.
Serve with a nice cup of tea or in combination with Gulabs and Laddoos!
