Here is another easy side dish using potato and tomatoes. We used really ripe, fresh and soft tomatoes drawing out all the beautiful flavours to create and lovely dish. Our potatoes in a fresh tomato sauce are great for your dinner table. Serve with a lovely green salad and you have a complete meal. Potatoes in a fresh tomato sauce from the simpley cooking channel.
INGREDIENTS:
600 grams of diced potatoes
2 x cups finely diced fresh, ripe tomatoes
2 x tablespoons butter
2 x tablespoons of parsley or basil
1/4 x cup white wine
1 x clove of garlic thinly sliced
shredded cheese for topping
olive oil
salt to taste
METHOD:
-preheat oven to 180 degrees celsius
-boil potatoes rapidly in salted water for 2 - 3 minutes
-once potatoes are done, drain and set aside
-add olive oil in a pan to high heat
-add garlic and once sizzling quickly add the tomato( don`t let the garlic get brown or burn, it can taint the taste of the sauce)
-add the parsley and butter reduce to medium heat and let cook for 3 minutes stirring occasionally
-salt the tomato mixture to taste
-once tomatoes are cooked remove from heat
-in a large baking dish place cooked potatoes then top with the tomato mixture, spreading out (as best you can) evenly over the potatoes
-add the white wine
-sprinkle the top with grated cheddar cheese
-place in oven and cook for 20 - 25 minutes until the top is golden and the potatoes and tomatoes have cooked together
