My holiday trifle

ingredients for frozen custard
- 475ml (2 cups) thickened cream (heavy cream)
- 240ml (1 cup) whole fat milk
- 170g (6 oz) caster sugar
- 6 egg yolks
- 1 vanilla pod
- pinch of salt
Method
1. Heat the cream, milk, sugar, and vanilla in a pot over medium heat until it's hot but doesn’t start to boil.
2. In a bowl, whisk the egg yolks and then slowly pour in the hot cream mixture while mixing continuously.
3. Pour it back into the pot and return to a medium heat. Cook for 4-5 minutes, stirring continuously, until the custard thickens and coats the back of a spoon.
4. Pour into a container and place it in the fridge to cool completely. After it’s cooled, use the KitchenAid ice cream churner to make it into frozen custard.
Ingredients for vanilla sponge
- 6 large eggs, at room temperature
- 200g (7oz) caster sugar
- 120g (4.2oz) plain flour (all-purpose flour)
- 3g baking powder
- 3g salt
- 1 vanilla pod
Method
1. Place the eggs into the bowl of the stand mixer and whisk until light and fluffy. With the mixer still running, add the sugar and vanilla, and mix until the sugar dissolves.
2. Add the baking powder, salt, and sifted flour, then carefully fold in the flour trying not to knock out any air from the eggs.
3. Line a baking tray with baking paper and lightly grease, then pour in the batter and bake at 180°C (356°F) for 25 minutes.
4. Leave to cool on a rack before cutting to assemble the dessert.
Ingredients for cherry granita
- 200g (7oz) frozen cherries
- 45g (1.6oz) caster sugar
- 250ml (8.5 fl oz) water
Method
1. Blend all ingredients and freeze in cups for at least 12 hours before you intend to shave it for serving.
2. To assemble the dessert, place some of the sponge cake into the bottom of the glass, then add a generous scoop of the frozen custard on top and finish by shaving the cherry granita and garnish with some mint.
