This classic and easy potato salad recipe is perfect for summer parties and picnics! My recipe includes add-ins like sweet pickles, smoked paprika, and hard boiled eggs for extra flavor.

Ingredients
2 lbs (910 g) potatoes cut into bite-sized pieces¹
3 hard-boiled eggs diced
½ cup (60 g) finely chopped red onion
½ cup (75 g) diced sweet pickles
1-2 stalks celery diced
½ cup (60 g) crumbled bacon² (may be omitted)
1 cup (220 g) mayonnaise
1 Tablespoon sweet pickle juice³
2 teaspoons sugar
2 teaspoons yellow mustard
½ teaspoon salt
¼ teaspoon Pepper
⅛ teaspoon smoked paprika

00:10 Place potatoes in a large pot and cover with water. Bring to a boil and cook until tender when pierced with a fork. Drain and allow potatoes to cool completely.
03:30 Prepare dressing by whisking together mayonnaise, sweet pickle juice, sugar, mustard, salt, pepper, and smoked paprika until well-combined.
05:37 Once potatoes have cooled, combine cooked potatoes, eggs, onion, sweet pickles, celery, and bacon in a large bowl. Set aside.

Notes
Recipe yields approximately 3lb (1.4kg) of potato salad
¹Golden potatoes or Fingerling potatoes are my preference when making potato salad. If using these varieties I often do not peel the potatoes, but you can if you’d like!
²You can use store-bought crumbled bacon (make sure it is “real” bacon and not “bacon-flavored”, this is usually sold near the salad dressings). If using freshly cooked bacon, this will be about 5-6 strips.
³For a less-sweet potato salad, you may substitute vinegar instead
