Just when I thought amaretti was the best cookie in the world, I added lemon zest and limoncello and took it to a whole new level. This cookie is out of this world and when friends taste them they agree. You must try them too and see for yourself. Amazing!

Preheat over to 350°F
In a mixing blow beat 2 egg whites and a little later add 190 grams of sugar. Continue to beat this for 12 -15 minutes until like marshmallow cream. Add 1 tablespoon limoncello, 2 teaspoons honey, 1 teaspoon almond extract and lightly fold in. Finally add 300 grams of almond flour and gently fold in. Scoop onto cookie sheet and form into round balls, roll around in powder sugar and slightly pat down each ball.
Bake for 18 to 20 minutes.
Cool before serving.
