Fish in foil packets is an elegant way to serve dinner, fast. Feel free to add your favorite herbs and seasonings.
Ingredients:
1 (12 oz) pkg frozen cod fillets, thawed
4 sprigs fresh herbs such as dill or fennel
1 tbsp butter
¼ cup dry white wine or chicken stock
Set a grill to medium-high heat. Cut 4 18-inch pieces of foil and make them into 2 stacks.
Fold the edges of the double-stacked foil upwards to create a basket and fill each packet with 1 fillet of cod.
Top each fish fillet with fresh herbs, a dot of butter and 2 tbsp of white wine. Sprinkle with salt (in moderation) and pepper.
Seal packets tightly and set on the coolest part of the grill. Grill fish for 8 min or until fish is opaque. Allow fish packet to cool slightly before opening carefully to avoid escaping steam.
