Easy Homemade Palao Masala (Fiji Indian Style)
• 1 tbsp cumin seeds
• 1 tbsp fennel seeds
• 4 star anise
• 1 tbsp nutmeg powder (or 1 whole nutmeg)
• 10cm piece cinnamon stick (broken into pieces or 1 tbsp cinnamon powder)
• 1 tsp cloves
• 10 cardamom pods
• Coffee grinder or spice grinder
Method:
1) Take a non stick fry pan put it on low heat, add your cumin and fennel seeds and dry roast it for 5 minutes or until it gets a light brown colour and cool it down for 1 minute.
2) Take your spice grinder, add your spices, and grind it into a fine powder.
3) Use it every time you want to make palao.
4) Left over palao masala can be stored in a sealed container or a bottle in the cupboard for months or in the fridge for over 12 months to retain its freshness.
5) Enjoy.
