This tasty treat not only satisfies the craving of coconut lovers, but brings local and foreign culinary art form to the table. Ingredients for dough prep:
3 cups all purpose flour
4 ozs unsalted butter
cold water for mixing
1/8 tsp salt
Tart filling:
1 grated coconut
1 dash of vanilla extract
1/2 tsp cinnamon spice
1/2 tsp ground ginger (fresh grated ginger can be used)
1/8 tsp grated nutmeg
1 1/2 cup brown sugar
Tips:
1. Excessive water causes too much gluten to develop
2. The dough should be wrapped in foil, or cling wrap to prevent drying out
Bake in a pre-heated oven at 375 degrees Fahrenheit for 15-20 mins, remove and brush the tarts with glaze mixture then return to the oven until golden brown
glaze mixture:
1/4 cup water
2 tbsp brown sugar
drop of vanilla essence
