Recipe:
Gingerbread Cottage Cheese Blondies: Serves 9
Macros (Estimate): 1 Serving without cookies
Calories: 140 | Protein: 6.5 g | Carbs: 12 g | Fat: 8 g | Sugar: 7.1 g
Ingredients:
3/4 cup cottage cheese (170g)
2 eggs or 3 egg whites
1 tbsp vanilla extract
1/3 cup maple syrup, (80g) (or whatever sweetener you like)
2 tbsp molasses (40g)
1 1/4 cup almond flour, toasted 125g (or oat flour, no need to toast)
1 tbsp coconut flour, 8g (or 3 tbsp of oat flour or additional almond flour 18g)
1 tsp baking powder
2 tsp ground ginger
1 tsp cinnamon
1/4 tsp all spice
Pinch of ground cloves
½ tsp salt
2 tbsp - ¼ cup white chocolate chips
9 Gingerbread men, topping (2 inches or crushed ginger or cinnamon cookies)
Instructions:
1. Preheat oven to 350 degrees F and line an 8×8 baking dish with parchment paper.
2. Toast your almond flour on a baking sheet with parchment for 7-8 min until lightly golden, then let it cool completely.
3. In a food processor or high-speed blender, combine eggs, cottage cheese, maple syrup, molasses, vanilla, spices, baking powder and salt and blend until smooth.
4. Whisk together almond flour and coconut flour in a medium mixing bowl. 5. Pour cottage cheese mixture into dry ingredients and stir until just combined.
6. Pour batter into the prepared baking dish and add the gingerbread men or crushed cookies and bake for 20-25 minutes (or until a knife comes out cleanly from the center of the pan. Let the pan cool completely on a wire rack before slicing into 9-12 brownies.
Store at room temperature for 3 days or refrigerate for 7 days or freeze up to 3 months.
