Kala Chana Pulao – Black Chickpea Pulao
Ingredients
• Rice 2 cups, soaked for 1 hour
• Black chickpeas (Kala Chana) 1 cup, soaked overnight
• Desi ghee 3-4 tbsp
• Onion 1 big, chopped
• Green cardamoms 8
• Black cardamoms 2
• Cloves 4
• Star anise 1
• Cinnamon sticks 2
• Cumin seeds 1 tsp
• Mace 2
• Potatoes 3 medium, cut into cubes
• Salt to taste
• Cumin powder 1 tsp heaped
• Coriander powder 1.5 tsp heaped
• Red chili powder to taste
• Dried fenugreek 1 tsp
• Green chilies 4-5
• Fresh coriander handful, chopped
• Fresh mint leaves handful
