A reverse-sear is one of the best methods for cooking a steak. A perfect way to break down the fat and connective tissues and get that delicious crust that everyone loves!
In this video, we show you how to reverse sear a tomahawk steak using the sear zone on the Napoleon Prestige Pro 500!
Ingredients
- 1 prime or wagyu tomahawk steak
- Your favorite rub or seasoning
Instructions
- Bring your grill to between 250 and 275 degrees, set up for indirect cooking
- Season steak well on all sides
- Place steak on grill and place meat thermometer in the fattest part of the steak
- Cook until steak reaches an internal temperature of 115 degrees
- Turn on your infrared sear zone and let come to temp (note: if you are not cooking on a Napoleon, you can achieve this same effect with a cast iron pan or even directly on the grill by getting your grill or cast iron up to 450-500 degrees)
- Place steak on side burner and cook 1 minute on each side
- Remove and let rest for 10 minutes
- Slice and enjoy!
