Ingredients:
4 medium tomatoes (or 3 large)
A lemon sized tamarind soaked in 2 cups of water
handful of coriander leaves
2 green chilies
1/2 tsp roasted jeera powder
1/2 tsp turmeric powder
3/4 tsp Kashmiri chilli powder
Pink himalayan salt or as needed
1/2 tsp freshly ground black pepper powder
a small piece of jaggery
---tadka---
2 tsp coconut oil
a big fat pinch of jeera (cumin seeds)
3/4 tsp mustard seeds
4 sliced shallots
curry leaves
2 whole red chilies
1/3 tsp Hing
(you can add 1/4 tsp fenugreek seeds to the tadka if you prefer, its just a matter of personal choice)
