For the Strawberries:▪️1 lb. Strawberries, sliced (~3 Cups)▪️2 Tbsp Sugar▪️

For the Whipped Cream:▪️1 Cup Heavy Whipping Cream▪️2 Tbsp Sugar▪️1/2 tsp Vanilla▪️

For the Shortcake:▪️2 Cups Flour▪️1 Tbsp Baking Powder▪️1 Pinch Salt▪️3 Tbsp Sugar▪️1/4 Cup Cold Salted Butter, cut in cubes▪️1 Cup Milk▪️

🌱Vegan Modification: Sub in coconut oil for butter, oat milk for milk, and coconut cream for heavy cream
.
1️⃣ Preheat oven to 425°F
2️⃣ Mix together the strawberries and sugar and set side in the fridge
3️⃣ Mix all ingredients for the whipped cream together with a hand mixer until fluffy and set aside in the fridge
4️⃣ In a large bowl, combine flour, baking powder, salt, and sugar
5️⃣ Add the butter and crush it into the flour with your hands until the mixture is combined and has a sandy texture
6️⃣ Add the milk and stir until just combined
7️⃣ Spoon into 6-8 dough balls on a parchment lined baking sheet and bake for 12-15 mins until golden brown
8️⃣ Pierce shortcakes with a fork around the center to separate it into two; fill with strawberries and whipped cream and enjoy immediately while the shortcake is hot!
