An ingredient so commonly used in large factories that deal with commercial quantities of supermarket bread. It's not a desired ingredient for slower fermenting breads as it does exactly the opposite of that. SPEEDS THINGS UP! But it definitely makes the bread fluffier, softer and more golden.
How To Use Bread Improver/Dough Conditioner:
Add 1% based on the weight of the flour. For example 5g of bread improver to 500g of flour.
How To Use Vitamin C:
Add a pinch of vitamin C to your dry ingredients.
