Gram flour vadas fried and dipped in dahi and topped with colourful condiments for a fabulous experience.
DAHI FULKI
Ingredients
1 cup yogurt
4½ tsps red chilli-garlic paste
A pinch of asafoetida (hing)
Salt to taste
1 cup gram flour (besan)
¼ tsp baking soda
A pinch of turmeric powder
1 tbsp oil + for deep frying
Sliced onions for garnish
Chopped green chillies as required
1 tsp cumin seeds
2 dried red chillies, stemmed and broken into small pieces
Chopped fresh coriander for garnish
A pinch of red chilli powder
A pinch of roasted cumin powder
Method
1. Take yogurt in a bowl. Add 2 ½ tsps red chilli-garlic paste, asafoetida, salt and whisk well.
2. Add 2 cups water and mix well. Refrigerate for 3-4 hours.
3. Take gram flour in a bowl. Add baking soda, turmeric powder, salt, remaining red chilli –garlic paste and mix well.
4. Add ½ cup water and mix well to form thick batter. Beat well for 2 minutes.
5. Heat sufficient oil in a kadai. Drop small portions of gram flour mixture and deep fry till golden brown and crisp. Drain on absorbent paper.
6. Add the fried dumplings in yogurt mixture and refrigerate for 1-2 hours.
7. Transfer in a serving bowl. Sprinkle sliced onions and green chillies on top.
8. Heat 1 tbsp oil in a small nonstick pan. Add cumin seeds and once they start to change the colour, add dried red chillies and mix. Add this tempering to the bowl. Sprinkle coriander, red chilli powder and cumin powder on top.
9. Serve.
