Ingredients:
- For the Cajun Seasoning:
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp cayenne pepper (adjust to taste)
- 1/2 tsp black pepper
- 1/2 tsp salt
- For the Dish:
- 4 boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 medium potatoes, diced (Yukon Gold or red potatoes work well)
- 2 tbsp olive oil
- 1 cup shredded mozzarella cheese (or any melty cheese of your choice)
- 1/2 cup sun-dried tomatoes, chopped (optional)
- Fresh parsley, chopped, for garnish
Instructions:
1. Preheat Oven:
- Preheat your oven to 400°F (200°C).
2. Prepare Cajun Seasoning:
- In a small bowl, mix together all the ingredients for the Cajun seasoning.
3. Season the Chicken:
- Place the chicken pieces in a large bowl, drizzle with 1 tablespoon of olive oil, and sprinkle half of the Cajun seasoning over them. Toss to coat the chicken evenly.
4. Cook the Potatoes:
- In a large oven-safe skillet, heat the remaining 1 tablespoon of olive oil over medium heat.
- Add the diced potatoes and sprinkle them with the remaining Cajun seasoning. Cook the potatoes, stirring occasionally, until they are golden and slightly tender (about 10-12 minutes).
5. Cook the Chicken:
- Push the potatoes to one side of the skillet and add the seasoned chicken pieces to the other side. Cook the chicken until browned on all sides and cooked through (about 8-10 minutes).
6. Combine and Add Cheese:
- Once the chicken and potatoes are cooked, mix them together in the skillet.
- If using sun-dried tomatoes, add them at this stage.
- Sprinkle the shredded mozzarella cheese evenly over the top.
7. Melt the Cheese:
- Transfer the skillet to the preheated oven and bake for 5-7 minutes, or until the cheese is melted and bubbly.
8. Garnish and Serve:
- Remove the skillet from the oven, and garnish the dish with freshly chopped parsley.
- Serve hot and enjoy!
