Smoked Mullet is so delicious and is easy way of cooking fish. We caught some Marion Bay Mullet while camping at Marion Bay Caravan Park, Yorke Peninsula, and we found a sheltered spot to smoke our Marion Bay Mullet for dinner.

The Marion Bay Mullet had been soaking for most of the day in brine (a mix of soy sauce, brown sugar and salt) in the refrigerator. Slit are cut into the flesh of the Marion Bay Mullet allowed the brine to soak in, infusing the fish with a subtle soy flavour.

We used apple flavoured wood chips in our smoker, and the fish was cooked in around 20 minutes. Smashed potatoes and a rocket, pear, and parmesan cheese salad with balsamic vinegar dressing, completed the meal. The flesh of the fish was flaky and white, with a delicate smoky flavour.

It was the perfect end to a perfect day's fishing, by smoking fish looking over Marion Bay!
