Thattu dosa and Thattukada chutney.
Ingredients
*For Dosa batter*
White rice or idli- dosa rice(പച്ചരി) -2 cups
Black gram (ഉഴുന്ന്)(without skin) -3/4 cup.
Rice flakes(അവൽ)-1/4 cup
Cooked rice(ചോറ്)-1/4 cup
Fenugreek(ഉലുവ)-1/2 tsp
Tips to get soft Dosa:
1.soak the rice,black gram &fenugreek (separately) for 6 to 8 hrs.
2.use the water used for soaking the black gram to grind the rice&black gram.
3.Before starting grinding don't forget to soak the rice flakes.
4.grind the black gram very smooth.
5.mix the ground batter,after cooling down to room temperature.
6.mix the batter at least for 5 minutes to 10 minutes.
7. fermentation time depends on the temperature of the area where u live.
8.winter season takes more time to ferment.
9.adjust the temperature of the pan before u start making dosa.
10.sprinkle some water on the pan to adjust the temperature,then pour the batter.
11.use medium heat to cook the dosa
12..use Kashmiri chilli powder in the coconut chutney to get good colour.
