Kothimbir vadi is a traditional Maharashtrian recipe. This recipe is a little different form traditional one, a little easier to follow. You can have this at any time of the day either shallow or deep fried. You can try this recipe at home and drop a comment for me. Do not forget to like, share and subscribe.
Ingredients:
• 1 bunch Coriander leaves
• 1 cup Besan
• 3~4 tsp Rice flour
• 1 tbsp white Sesame seeds
• 1/2 tsp Cumin seeds
• 1 tbsp Garlic-Green chili paste (7~8 Garlic cloves & 3~4 Green
chilies roughly blended)
• 1/2 tsp Turmeric powder
• Salt to taste
• 1 tsp Red chili powder
Method:
• Pluck the stem part of coriander leaves and wash them well.
• Dry the coriander leaves and chop finely.
• Add besan, rice flour, sesame seeds, cumin seeds, garlic-green
chili paste, turmeric powder, salt to taste, red chili powder and mix
everything well together.
• Leave few sesame seeds behind for garnishing.
• Press the coriander leaves a little while mixing so that these will
release moisture.
• Add very little about 1-2 tbsp water and knead dough.
• Add little oil and coat the dough well.
• Take a dish or plate and grease it well with oil.
• Sprinkle few sesame seeds and transfer the dough into the dish.
• Spread the dough well all over the plate.
• The vadi should be a little thick.
• Again sprinkle few sesame seeds on the dough.
• Heat up about 1-1 1/2 “water at the base in the cooker.
• Put the dish on the cooker.
• If the dish is smaller and fits in the cooker then place a pot below
the dish.
• Remove the whistle of the lid and cover the cooker with it.
• Steam the vadi on medium heat for about 15-20 minutes.
• Turn off the gas and let the plate be in the cooker for another 15-
20 minutes.
• Take the dish out and check by inserting a knife. It should come
out clean.
• Cut the vadi into pieces.
• Heat up oil in a pan.
• Drop the kothimbir vadi into hot oil and fry well.
• Take it out, drain excess oil and transfer the vadi into a plate.
• Kothimbir vadi is already. You can have kothimbir vadi as it is.
