Ingredients:
Basmati rice - 2 cups
Tender jackfruit pieces - 4 cups ( fairly big pieces)
Onions - 3 sliced
Tomatoes - 3 sliced
Turmeric powder - 1/2 tsp
Chilli powder - 2 tsp
Garam masala - 2 tsp
Grated Ginger garlic - 2 tsp
Salt
Coriander leaves
Pudina leaves - a handful
Method :
Cut the tender jackfruit into fairly big pieces, slice the onions and tomatoes and keep ready.
Cook the basmati rice and keep it ready.
Wash the jackfruit pieces thoroughly.
Take a big pan / vessel fill it with 1/4 of water and bring it to a boil.
Add the jackfruit pieces and cook it to about 75 percent.
Drain water and keep aside.
Next deep fry in oil till they turn just a light brown.
For the sabzi:
In the same pan , add 3 tbsp oil or ghee or both.
Once it heats up add the sliced onions, sauté until translucent.
Now add the grated ginger garlic , sauté for a min.
Next add the tomatoes and sauté till tomatoes turn soft..
Now add all the powders( turmeric, chilli and garam masala)
Mix well.
Add the fried jackfruit pieces and mix well.
Add a handful for mint leaves for more flavour.
Lastly garnish with coriander leaves.
Keep the cooked basmati rice ready.
Take a deep vessel and begin layering with the rice first, spread evenly.
Next a layer of the jackfruit sabzi.
Next again a layer of the rice and so on till u get even layers of the rice and the sabzi.
