Pierogi Ruskie is a dumpling recipe from my Polish mother in Law. Delicious dumplings filled with mashed potato and white cheese.

🙍 The recipe Is for - 6 People.
🕐 Preparation time - 1 Hour & 30 Minutes
🍳EQUIPMENT:
👉 Big Cooking Pot
👉 Big Bowl
👉 Wooden Spatula
👉 Potato Masher
👉 Measuring Cup
👉 Rolling Pin
🍠 INGREDIENTS:
👉 2 kg Potatoes
👉 250 g White Cheese
👉 1 tbsp Salt & Pepper
👉 1 kg Flour
👉 500 ml Boiled Water
👉 100 ml Sunflower Oil
👉 1 Egg
👉 1 tsp Salt
📋 INSTRUCTIONS:
👉 First you start with peeling the potatoes and boil them. After boiling mash them and let it cool down. When cooled down add the white cheese with pepper and salt. Mix this well and let it rest in the fridge. The longer it sits in the fridge the better. I always make it the day before.
👉 For making the dumpling dough you add the flour in a big bowl and add the boiled water to it. Mix this with a wooden spatula. Add sunflower oil and also mix this. Now add the egg and salt and mix it. Take it out of the bowl and knead it till the dough is firm and it bounces back when you press it with your finger. Let it rest underneath a tea towel for 30 minutes.
👉 After 30 minutes cut the dough in 4 peaces. Roll out the dough and cut out rounds. Fill the dough with the potato and cheese mixture and fold them. Make sure you close them good.
👉 Boil water with salt and add the pierogi's to the water. Boil them for 5-6 minutes. Stir them ones in a whole. Take them out of the water and give them a quick flush with cold water.
You can serve the Pierogi's with fried onion and bacon, cream fraiche or borscht. Or serve them with all 3. Your choice.
