Colcannon is a traditional Irish mashed potato dish, and a hearty comfort food in Ireland. This dish is a year round staple, although is makes a special appearance at holidays, especially St. Patrick's Day. Colcannon is a delicious mix of fried cabbage and bacon into creamy mashed potatoes. This perfect side dish goes wonderfully alongside roasted chicken or a seared steak.
Colcannon
Ingredients
1 1/2 pounds of russet potatoes peeled and diced
3 bacon slices
2 to 3 cups of chopped cabbage
1/2 cup of chopped onion
5 Tbsp salted butter
3/4 to 1 cup of milk (or half and half)
salt and pepper to taste
Instructions
Boil potatoes until they are fork tender. Drain the potatoes and add 4 Tbsp of butter. Microwave the milk until it is warm and add a little at a time to the potatoes until you get a creamy and smooth consistency. Season with salt and pepper. In a large skillet cook bacon until crisp and then remove. Add 1 Tbsp of butter and onion to the skillet and cook until onion is tender. Add the cabbage and cook for about 5 minutes until cabbage is tender and has a golden color. Fold the cabbage mixture and crumbled bacon into the mashed potatoes until well combined. Add additional salt and pepper if needed.
