Noodles in a coconut gravy gives an exciting flavour, super easy to make and you can personalise this Burmese recipe with your all your favourite ingredients.
KHOWSUEY
Ingredients
2 tbsps gram flour (besan)
1 cup coconut milk
1 tsp green chilli paste
Salt to taste
2 tbsps sliced baby corns
2 tbsps chopped yellow zucchini
2 tbsps chopped green zucchini
2 tbsps broccoli florets
2 tbsps chopped carrot
Boiled noodles for garnish
Chopped greens of spring onions for garnish
Chopped white bulb of spring onions for garnish
Fried onions flakes for garnish
Fried noodles for garnish
Roasted peanuts for garnish
Fried garlic flakes for garnish
Red chilli flakes for garnish
Lime juice for garnish
Method
1. Heat a deep non- stick pan, add besan and lightly roast it on medium heat, stirring continuously.
2. Switch off heat. In a blender add roasted besan, coconut milk and blend to a fine paste. Add little water. Add green chilli paste and salt. Blend to a fine paste.
3. Heat a deep non-stick pan, add blended puree and ½ cup water. Mix well. Boil on medium heat, stirring occasionally.
4. Add sliced baby corns, yellow zucchini, green zucchini, broccoli and carrot. Mix well. Let it cook on medium heat for 4-5 minutes. Switch off heat.
5. Transfer gravy in a serving bowl.
6. Garnish with boiled noodles, chopped greens of spring onions, white bulb chopped, onions flakes fried, fried noodles, peanuts, fried garlic flakes, red chilli flakes, lime juice.
7. Serve hot.
