💥INGREDIENTS💥
➡️COOKIE CRUST:
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 stick unsalted softened butter
- 1/2 cup packed light brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp almond extract
➡️CREAM CHEESE FROSTING:
- 2 package cream cheese
- 2 cup powdered sugar
- 2 tsp vanilla extract
- Pinch of fine sea salt
➡️TOPPINGS:
- 1 cup of raspberry preserves
- 1 cup Fresh raspberries
✨INSTRUCTIONS✨
- Preheat oven to 350°F. Grease a Tart pan with cooking spray.
- In a medium bowl, whisk together the flour, baking powder and salt.
- In another large mixing bowl beat the butter and sugar together on medium-speed until light and fluffy (2-3 min) Add the egg, vanilla and almond extract. Beat on medium speed until completely combined.
- Add in the dry ingredients, and beat on low speed until just combined.
- Press the dough evenly into the prepared pan. Use a fork to poke a few holes in the dough, to prevent it from bubbling up.
- Bake for 15-20 minutes, or until the dough is lightly golden. After let ot cool for 20 minutes.
- Meanwhile, whisk together the frosting ingredients until combined.
- Spread the raspberry preserves out evenly on the baked cookie crust.
- Spread out the cream cheese frosting out evenly over the persevere and the cookie crust
- Sprinkle with raspberries, Slice, serve and ENJOY!
