INGREDIENTS
1 and 1/2 cups of dried white peas
3/4 soup bowl of sliced bamboo shoots
3/4 cup of chopped Chinese chives
4 large culantro / Mexican coriander leaves, roughly torn
1/2 inch ginger, crushed
4 green chillies, slit lengthwise
3 small pieces of wild orange rind
3/4 tsp of Bi-Carb Soda
salt to taste
some chopped coriander leaves
FOR TEMPERING
2 tbsp of cooking oil
1/2 tsp of cumin seeds
1 bay leaf
1/2 cup of chopped Chinese chives
1 and 1/2 tbsp of crushed hooker chives roots
5 dried whole red chillies
1/2 of a medium size onion, sliced
