A flaky + creamy tiropita featuring none other than our friend....the butternut squash! My mom gave me her recipe, and of course I changed it a little to my own detriment. Mother knows best. Take a stroll through Greece as we work our way through a simple and healthy pita. #FlamBaé
RECIPE:
1 butternut squash
1 white onion
1/4 cup chopped fresh sage
1/4 cup chopped fresh mint
1/3 lb Metsovou feta
2 eggs
1/8 tsp onion powder
1/8 tsp garlic powder
1/8 tsp smoked paprika
1/8 tsp cumin
1/8 tsp black pepper
1/8 tsp orange zest
13 sheets of size 4 phyllo
sesame seeds to top
olive oil
1. Cut butternut squash in half. Drizzle EVOO, salt, pepper. Bake @ 450 degrees till it's soft when pierced with a fork. Remove from oven, and peel the skin off. Mash the butternut squash in a medium-sized bowl & let cool.
2. Dice & sauté the onion till translucent. Let cool.
3. Finely chop mint & sage. Crumble the feta.
4.. Add the onion, mint, sage, & feta to the butternut squash bowl. Crack in two eggs, and top with the spices. Drizzle 2-3 tbsp of olive oil in the the bowl to make the filling more rich. Add salt. ***I know I said zest of 1/2 an orange, and 1/4 tsp of each spice in the VIDEO, but I was wrong--hence why my mother reigns supreme. Opt for the written instructions here for a much better balanced pita lmao.***
5. Brush your dish with olive oil. Stagger 5-6 phyllo sheets in the dish, so a few inches of each sheet hangs off the edges. Drizzle olive oil between each sheet of phyllo-- do not use a pastry brush or press the layers down! Wrinkles are welcome!
6. Plop dollops of half your filling in the dish. Lay one piece of phyllo across the entire dish. Add 2nd half of filling on top in dollops.
7. Layer and stagger 5-6 more sheets of phyllo on top, just like we did with the base.
8. Roll each edge of extra phyllo in to create a crust around the edge of the tray.
9. Drizzle the top with plenty of olive oil. Spray a mist of water using a spray bottle, or just your fingertips. Top with sesame seeds. Score the top.
10. Bake @ 350 degrees F for 50-60 mins in the middle rack. Length of bake will depend on your oven. Pay attention!
